Recipe for the Holidays-GARLIC MASHED CAULIFLOWER
Hey guys here’s a lil’ something I’d like to share with you from my kitchen to yours. I hope you love it and share it with your friends and family this Holiday season!
This recipe is super easy AND healthy. Even though I LOVE mashed potatoes, I don’t always need those starches, so I found this tasty and yummy alternative!! Besides the fact that it’s an awesome alternative, people who usually hate vegetables, love it. If you have a large food processor or blender, I recommend using it for this recipe. And please feel free to tweak any of the ingredients to your tasting.
*** This if Gluten Free but has dairy because of the Parmesan, replace with any other cheese you’d like or you can just delete it all together. ***
These amounts should make about 4 servings
- PREP – 15 mins
- COOK – 10 mins
- READY IN – 25 mins
- 1 head cauliflower, cut into florets
- First, take the florets and place into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
- Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
- Transfer half the cauliflower to a food processor or blender; cover and blend on high. (Here you might need a tiny bit of olive oil to help blending). Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, Parmesan cheese, cream cheese, salt, and black pepper.
- Transfer to serving dish, add any desired toppings and ENJOY!!
