Eggplant dipped in egg

What you need

  • olive oil
  • 2 eggs
  • one eggplant ( I prefer Japanese eggplant in which case you need 2 of them)
  • salt and pepper
  • whisk
  • mixing bowl
  • spatula
  • fork
  • sharp knife
  • frying pan
  • 2 plates
  • cutting board

How to make

  • wash eggplant
  • slice eggplant into thin slices like in the picture above
  • whisk eggs in mixing bowl ( you can add salt and pepper if you like)
  • heat oil in frying pan on medium heat
  • put slices of eggplant into egg mixture and let them soak for a bit
  • once oil hot then put slices in frying pan
  • let side down in frying pan brown and then flip
  • once flip let cook until second side brown
  • Put cooked slices aside until finished

Once all are cooked enjoy with your favorite grain like quinoa or rice with Braggs Aminos, Coconut Aminos or soy sauce!
I also like to add other veggies to the mixture!
