Eggplant Recipe!
Eggplant dipped in egg
What you need
- olive oil
 - 2 eggs
 - one eggplant ( I prefer Japanese eggplant in which case you need 2 of them)
 - salt and pepper
 - whisk
 - mixing bowl
 - spatula
 - fork
 - sharp knife
 - frying pan
 - 2 plates
 - cutting board
 
How to make
- wash eggplant
 - slice eggplant into thin slices like in the picture above
 - whisk eggs in mixing bowl ( you can add salt and pepper if you like)
 - heat oil in frying pan on medium heat
 - put slices of eggplant into egg mixture and let them soak for a bit
 - once oil hot then put slices in frying pan
 - let side down in frying pan brown and then flip
 - once flip let cook until second side brown
 - Put cooked slices aside until finished
 
Once all are cooked enjoy with your favorite grain like quinoa or rice with Braggs Aminos, Coconut Aminos or soy sauce!
I also like to add other veggies to the mixture!
