ZUCCHINI & CARROT FRIES

Don’t’ let this name fool you, these are healthy & delicious!!
This one is more of an APPETIZER but can be served as a SIDE as well!
They go well as a snack or a side to burgers/sandwiches; have these instead of Fries or potato chips.  Added to the plate they offer color and some flavor.  With this simple recipe it is the roasting of the veggies at a high temp in the oven for about 20minutes that makes them delicious, and did I mention EASY!!  I like to use Zucchini because it seems to take on seasoning so well, but feel free use other veggies that are your favorites.
Prep Time – 10-15min.
Cook Time – 20min
Ingredients :
4-5 medium Zucchini
4-5 carrots
2-3 tbls Olive Oil
Salt
Pepper
Paprika
Crushed Red Peppers
  1. Preheat oven to 425F
  2. Cut veggies into 3in sticks – trying to make sure they are even thickness
  3. Line baking tray with baking paper if you have it; if not just cover tray lightly w/Olive Oil
  4. Season – Salt, Pepper, Paprika & Crushed Red Peppers; Really you can use whatever spices you’d like that fit the rest of your meal.  Lightly toss your veggies with your preferred seasonings and 1-2 tbls of Olive Oil. I usually do this in a large bowl and mix it all around.
  5.  Spread the seasoned veggies over your baking tray and Roast, tossing halfway through, for about 20 minutes or until golden & slightly browned at the edges. If you like them crispy, then leave in a little longer
